Friday Fun: Truth (and CHO Giveaway winner!)

Oh, guys. I’m sorry. Twice this week, I didn’t post.

I’m a jerk.

In my defense, I just. didn’t. have. time.

I’ll make it up to you, though. Promise.

And I’m even still kind of ruining it because my Friday Fun isn’t that fun this week. It is, however, something that means something to me that I want to share.

This is a clip from one of my favorite shows, “Brothers & Sisters,” which I only discovered last weekend while home sick. I haven’t stopped watching it in my free time (AKA when I should have been sleeping) since.

I’d like to share one of my favorite quotes from it today, as I feel it is extremely relevant in my life at the moment.

“The world is too fragile for people to be untrue. There’s too much at stake, and life’s too short for lies.”

So poignant, so beautiful, and so true.

Truth matters. Be true to yourself and be true to others. There’s no point in anything else.

In happier news, our Chobani Giveaway winner is….

Hooray! Congratulations, Lisa! I’ll email you to get things rolling.

I’d really love it if you guys would share some of your favorite quotes this weekend — especially if they have to do with truth.

Happy Friday. 🙂

Aren’t CHO Glad? Giveaway!

Check out what’s happening in my fridge:

I know, right? And they’re all delicious.

There are three flavors…

0% Blood Orange:

0% Apple Cinnamon:

and 2% Passion Fruit:

(Please excuse the blurry picture. It was on a rainy day that I took these.)

I’ve had the pleasure of tasting these, through multiple breakfasts (but I’ll just share three — one of each!)

I tried the Blood Orange in overnight oats with oats, chia seeds, and flax seed.

You may recall this next breakfast — I tried the Passion Fruit in my Valentine’s Day breakfast, with my Chocolate Granola and strawberries.

And, this morning, I had the Apple Cinnamon in overnight oats(simple — just the yogurt and 1/3 cup oats) with a spoonful of organic, natural peanut butter.

Desk picture!

Smelled like cake batter, tasted like happy.

Want to pop open your own new Chobani flavor?

Of course you do.

So aren’t CHO lucky (ok, I swear, I’m done with that) that Chobani sent me these flavors to try for free (well, I guess I’m the lucky one there) and then offer to you guys as a giveaway?

Of course you are.

Three ways to enter (US residents only, please — sorry, international friends!):

1. Comment here telling me a funny joke. (Make me laugh! I need a few good laughs this week).

Chobani Winner and Friday Fun: An Adele Medley

First Friday Fun! Yay!

Is anyone else obsessed with Adele lately? I know I am totally late to the party, but after months of lamenting her being so overplayed on the radio, I suddenly find myself craving hearing her songs.

So, I have not only found her versions of her songs on the internet, but covers, as well. Check this medley out. I think it’s so good!

Isn’t that great? People are so talented! Soooo much more talented than I am.

Speaking of good things… Chobani! The Chobani Giveaway winner is:

And by the way, that is a great tip! I am definitely going to try that — I had definitely never thought of it before.

Congratulations, Pam!  I’ll email you the details.

Happy weekends, friends? Who else has a three-day weekend?

Chobani Giveaway

Yay! First giveaway of the new year! And it’s CHOBANI!

As you know, my New Year’s Resolutions can basically be boiled down to “be healthy this year.”

It’s been very easy so far, much in thanks to Chobani. I’ve had some pretty kick-butt yogurt bowls.

I want you to be able to keep up your healthy resolutions, too. Everyone should be able to have delicious yogurt bowls!

I mean, okay, obviously you can all go out and buy some Chobani. And seriously — you should. These big containers are very cost-effective if you eat yogurt as much as I do… which, of course, you should, because it’s so good for you.

However, I also want to be able to help one of you get some Chobani for free! The company was nice enough to reach out to me and offer me these free samples plus a set to offer for one of you.

These 32oz containers are new and so convenient! They include….

0% Plain:

0% Vanilla:

and 2% Plain:

My favorite is Vanilla, as you probably know (since I eat it all. the. time.) but I love all of them and you will too!

The containers also each have a unique recipe on them that use the yogurts. These are the ones I got:

There are also a bunch more on their recipe page.

To enter the giveaway and help your New Year’s Resolutions by winning these awesome new yogurt containers, you can enter in two different ways (so, up to two entries per person):

1. Enter a comment below with your favorite ingredients in a yogurt bowl.

2. Tweet about the giveaway, linking to this post and copying me (@honeykaitlin) and Chobani (@chobani) in the tweet, then comment here again linking to your tweet.

USA & Canada residents only please (sorry, international readers!) but Canadian readers, please know that unfortunately Chobani can currently only offer the 0% Plain and the container will not have a recipe on the packaging.

UPDATED 1/9/12: I forgot to add an end date/ time to the giveaway! Please enter by noon on Thursday, January 12. I will randomly pick the winner and announce it on Friday, January 13.

Enter away!

Free Cookies! (Holiday Gift Giveaway)

Did that get your attention?

I thought it might. And that’s good, because I want to keep it for this whole post. There’s lots of information here, plus a GIVEAWAY at the bottom, plus a COUPON CODE for everyone else who doesn’t win!

Anyway, these free cookies. They’re free cookies to make — very easily — at your convenience.

Or, if you’re in the giving mood since it’s the holiday season and all, at someone else’s convenience. Good thing, too, because it is seriously a perfect holiday gift.

Allow me to explain.

You see, there’s this really cool company called The Mason Jar Cookie Company, which allows you to create your own custom cookies.

You get to choose a base (out of four options) and three add-ins (out of thirty!), and all of a sudden you have a “recipe” for  your own custom cookies. And you get to name your blend, too!

Then, in the mail, you get this attractive tube.

Which you open to find this:

And then you dig down a bit, and you find your custom cookie mix, carefully layered inside a mason jar.

It even comes with custom nutritional statistics and baking instructions!

Which brings me to the next part — baking it!

All you need to provide is the butter,  egg and vanilla.

And then it comes together so quickly, it’s ridiculous.

In just a few minutes, you have delicious cookies right out of the oven, with basically no work at all.

Super easy clean-up, too.

Oh, and even better? You can re-order your mix (or get your friends to order your exact mix) easily with your custom code!

(Note: That’s not my code, nor was this my mix — I just got their recommended blend.)

Anyway, here are the two best parts:

1. I get to do a GIVEAWAY!

You have until Thursday, December 8th at 12PM (noon) PST to enter.

Here’s how you can enter:

(Up to two entries by doing each of the below.)

  • One entry for commenting here with what your mix will be.
  • One entry for tweeting about it (and also copying me, @honeykaitlin and The Mason Jar Cookie Company, @masonjarcookie) and linking to this post.

2. All of you get to benefit from this — not just the winner! — because ALL of you can use the coupon code TENOFF to get 10% off your order.

It’s the perfect holiday gift for the person who has everything… or the person who just loves cookies! And especially the person who loves cookies but is hopeless in the kitchen. 🙂

Enter and order away! Let me know if you order one, too. 🙂

Dinner @ 6

Today brings, perhaps, one of the coolest and most important things I’ve ever done on Kaitlin With Honey.

I know — big statement, right? And what does that have to do with that dish above?

I’ll get to that in a second. 🙂 First, I want to give you a head’s up that you have a chance to win $100 through this post. You know, no big deal or anything. But you have to read this post first (it’s totally worth it)!

As a member of Foodbuzz, I get invited to do and try a bunch of really exciting things. This, however, takes the cake (Though… no, I did not make cake. What a tease.). I was selected as one of twenty bloggers to participate in Dinner @ 6, a competition held by Foodbuzz and American Express which involves creating a dinner out of six ingredients and six ingredients only (other than salt, pepper, oil and water). Feel free to visit the complete set of official rules if you want more information.

We’re judged on the following:

  • Creativity/Originality of Submission (33%);
  • Tastiness and Appearance of Submission (33%); and
  • Submission created with only six (6) ingredients (34%)

Now, for my submission!

I thought for a long time about what dinner I wanted to create and what ingredients I wanted to use. Believe me when I say that I changed my list of ingredients at least ten times, changing one ingredient at a time and sometimes overhauling my entire idea only to come full circle later. One or two of these recipe-changing incidents may or may not have occurred at 2:00 in the morning, after having woken up with some inspiration.

I know. I’m crazy. It’s cool. We can call it dedication.

My own criteria for my submission:

  • It had to be interesting;
  • It had to pack a lot of flavor;
  • It had to be colorful;
  • I wanted three different components;
  • It had to be accessible to anyone who wanted to make it;
  • It had to be healthy; and
  •  …It had to be something you’d find on Kaitlin With Honey even without the competition at hand.

So, again, we got to use some ingredients without counting them amongst our six.

I used salt, pepper, water and two different kinds of oils — olive and coconut.

And then — drum roll, please! — I chose my six lucky ingredients.

Because there are so few ingredients involved, the recipes are actually pretty simple.

Maple-Chili Pepper Glazed Salmon

makes four (4) servings

  • 12 oz fresh skinless, boneless and prepared (BBQ cut) salmon
  • 1/2 tbs extra virgin olive oil
  • 1/4 cup 100% pure maple syrup
  • 4-6 tsp chili pepper sauce (depending on your preference — I like a kick, so I went with 5 tsp)
  • 2 dashes salt

Whisk maple syrup and chili pepper sauce together. Halve and separate into two small bowls.

Sprinkle salt over raw salmon.

Heat olive oil in a pan over medium-high heat.

Place salmon in pan and brush maple-chili glaze (using only the glaze from one of the dishes) over tops of salmon. Once bottoms are cooked (about 3-4 minutes), flip salmon and brush cooked sides with glaze, cooking the other sides for about 3-4 minutes as well. Continue to flip and glaze liberally until the salmon is cooked through.

Drizzle remaining, separated glaze over tops of cooked salmon. Serve.

Caramelized Onion Mashed Sweet Potatoes

makes four (4) servings

  • 1/2 tbs extra virgin olive oil
  • 2 small or 1 large sweet onion
  • salt to taste (for onions)
  • 4-5 medium sweet potatoes
  • 2 tsp coconut oil
  • salt & pepper to taste (for potatoes)

Dice onions.

Heat olive oil in a pan over medium heat. Lower pan to low heat.

Put diced onions into pan with heated olive oil. Add salt. Stir and cover pan. Lower heat to a simmer. Drizzle a little more olive oil over the onions if you feel they need more moisture. Stir every few minutes until onions are caramelized (about 20-25 minutes).

Meanwhile, boil a pot of water.

Peel sweet potatoes. Cut into even pieces (about 1-1/2 to 2 inches thick). Boil potatoes for about 20 minutes or until soft to the touch with a fork. Once cooked through, drain potatoes.

Using a food processor, mix potatoes with coconut oil, salt and pepper. Remove mashed potatoes from food processor and put into a bowl.

Stir caramelized onions into mashed potatoes.

(and finally…)

Blackened Brussels Sprouts

makes four (4) servings

  • about 20-30 whole Brussels sprouts
  • 3/4 tbs extra virgin olive oil, divided
  • salt & pepper to taste

Trim all Brussels sprouts and halve, lengthwise.

Heat 1/2 tbs olive oil in a pan over medium-high heat.

Place all Brussels sprouts halves face-down in pan. You should hear them sizzle (that’s a good thing!). Drizzle remaining olive oil over the tops. Cover pan.

Cook for 6-8 minutes without touching them — that’s important! You have to let them blacken.

Remove cover and toss Brussels sprouts. Cook for about 2 more minutes.

If you time it right, you can do all of this at the same time. I actually started the potatoes and onions at the same time, then processed the potatoes while I cooked the Brussels sprouts. I then kept the mashed potatoes and Brussels sprouts warm in the oven (at 200 degrees) while I focused on the salmon, then served everything together. Not hard at all!

Now — here is where you come in. This is REALLY IMPORTANT for both me and you!

I need you to comment! And you need you to comment, too. Why? As part of the Dinner@6 contest sponsored by Blue Cash PreferredSM, American Express provided me with a $100 gift card to give out to one lucky commenter. Sound off in the comments for a chance to win! What is your favorite six-ingredient recipe?”

You have THREE ways to enter:

1. Comment here with your favorite six-ingredient recipe.

2. Tweet about this giveaway, mentioning that you entered to win $100 from Kaitlin With Honey, linking to this post and CCing me (@HoneyKaitlin) and Foodbuzz (@Foodbuzz) but not starting the tweet with either of our @handles (because then people who don’t follow us won’t be able to see the tweet). Then, link to your tweet in a comment here.

3. Blog about this giveaway, linking to this post. Then, link to your blog post in a comment here.

You have until noon PST on September 30, 2011. I will randomly a choose a comment that day.

This is a really big opportunity for me and I would be so grateful for as many comments as possible. Tell your friends and family, too! I would love to be able to provide more opportunities like this for you guys in the future!

(P.S. — Big THANK YOU to my friend Robyn for being my official taste tester and working her magic to make my pictures prettier!)
